Kimchi is a traditionally Korean side dish (banchan) of salted and fermented vegetables, often made with napa cabbage or Korean radish. It generally includes seasonings like garlic, red pepper flakes (gochugaru) and ginger. It has a sour, salty, savory, and spicy flavor. The mix of cabbage and radish gives a tangy, traditional flavor along with some serious crunch. 

Interestingly, Kimchi is a live food rich in gut-friendly probiotics. These live probiotic bacteria may be linked to some of Kimchi’s potential health benefits. The longer you let the Kimchi ferment, the more probiotics it has. Kimchi has been an integral part of the Korean food culture for thousands of years. Today, it is considered as a symbol of identity for Korean people and is globally appraised as a healthy food.
